Simple Butter Cookies

A classic 3-ingredient butter cookie recipe perfect for decorating at Easter or any time of year.

Prep: 30 mins (includes chilling)
Cook: 8–10 mins
Total: 40 mins

Makes: 8 biscuits


Equipment

Mixing bowl
Wooden spoon
Rolling pin (optional)
Cookie cutters (optional)
Lined baking tray


Ingredients

65g softened butter
2 tbsp sugar
65g self-raising flour


Method

  1. Mix butter and sugar together until smooth.

  2. Add flour and mix until a soft dough forms.

  3. Chill for 30 minutes if rolling out shapes.

  4. Roll to the thickness of a pound coin and cut into shapes.

  5. Place on a lined tray leaving space for spreading.

  6. Bake at 180°C for 8–10 minutes until lightly golden.

  7. Cool before decorating with icing.
