Rainbow Fudge

This recipe is not for the faint hearted — it’s very sweet! Perfect for parties, celebrations or a fun weekend treat, this colourful rainbow fudge is simple to make and ideal for little helpers.

Equipment

  • Non-stick saucepan

  • Baking tray

  • Wooden spoon

  • Parchment paper

  • Small bowls or containers

  • Plastic spatula or spoon

Ingredients

  • 450g white chocolate

  • 1 can condensed milk

  • Food colouring (of your choice)


Method

  1. Break or chop the white chocolate into small chunks and place in a non-stick saucepan with the condensed milk.
    Line a small baking tray with parchment paper.

  2. Melt very gently over a low heat, stirring occasionally until smooth and silky.
    Alternatively, melt in the microwave in 10-second bursts, stirring frequently. Do not rush this step.

  3. As soon as the chocolate has melted, stop stirring immediately to reduce the risk of the mixture splitting.

  4. Divide the fudge into small bowls or containers. Working quickly, beat in a small amount of food colouring to each bowl while the mixture is still slightly warm.

  5. Spoon the coloured fudge into the prepared tray, spreading gently with a spatula. Try to keep the layers as even as possible.

  6. Chill for 1–2 hours, or until completely set, before cutting into squares.


Storage

Will keep in the fridge for up to one week (if it lasts that long!).
