How to Decorate Your Christmas Cake: A Step-by-Step Guide

There’s something magical about baking at Christmas, isn’t there? The smell of spices in the air, little hands sneaking tastes of marzipan, and that proud moment when you stand back and admire your finished cake. Learning to decorate your Christmas cake is such a lovely way to get the whole family involved in the kitchen — whether your little one is helping to brush on the jam or your tween is mastering the icing.
This simple guide will walk you through how to marzipan and ice your cake so it looks (and tastes!) amazing, without any stress.
Step 1: Marzipanning the Cake

Before you start, make sure your cake is completely cool and level. Marzipanning should be done at least a day before icing, but if you can leave it for a few days, even better — it helps the marzipan firm up nicely.
You’ll need:
1 x 500g pack of marzipan (for an 8-inch round cake)
Warm apricot jam
Icing sugar (for dusting)
Pastry brush
Rolling pin
Sharp knife
Cake smoother or clean rolling pin
How to do it:
Prepare the marzipan: Soften the marzipan by kneading it gently until it’s pliable.
Secure the cake: Stick the cake to the board by brushing a little warm apricot jam underneath.
Apply the jam: Brush the cake all over with more jam to help the marzipan stick.
Roll the top: Lightly dust your work surface with icing sugar, then roll out the marzipan to about 3mm thick. Cut out a circle using the base of your cake tin as a guide, and gently place it on top of the cake.
Measure for the sides: Measure the circumference of your cake with a piece of string, then roll out a strip of marzipan to that length and the height of your cake.
Apply the sides: Wrap the strip around the sides, pressing gently to stick, and trim any excess with a sharp knife.
Smooth the surface: Use a cake smoother or rolling pin for a neat finish.
Leave to set: Cover the cake with a clean cloth and leave it to harden for at least 24 hours, ideally up to 7 days, before icing.

Step 2: Icing the Cake (and then Decorate your Christmas Cake!)
The easiest icing to use is Royal Icing, which gives a lovely snowy effect. If you’re feeling confident, you can use fondant icing instead, following the same method you used for the marzipan.
Royal Icing Recipe (for an 8-inch round cake):
500g icing sugar
3 medium egg whites
1 teaspoon glycerine
To make the icing:
Prepare your bowl: Place the egg whites in a large bowl.
Add the sugar gradually: Using an electric or stand mixer on medium speed, add the icing sugar a spoonful at a time.
Whisk to stiff peaks: Once all the sugar is added, increase the speed to high and whisk until the icing forms stiff peaks.
Add glycerine: Whisk in the glycerine to keep the icing slightly soft when set.
To decorate Your Christmas Cake:
Apply the icing: Spread the icing evenly over the top and sides of the cake using a palette knife.
Create texture: For a snowy look, pull the knife upwards to create little peaks.
Add decorations: Finish with your favourite decorations — a ribbon, festive figurines, or a sprinkle of edible glitter.
