Hidden Veggie Sausage Rolls

Who doesn’t love a sausage roll? These Hidden Veggie Sausage Rolls sneak in carrot and courgette to make them a little healthier - perfect for lunchboxes, parties or weekend baking with children.

Makes: 10 medium sausage rolls


Equipment

Frying pan
Grater
Mixing bowl
Rolling pin
Knife
Lined baking sheet
Pastry brush


Ingredients

1 tsp oil
1 medium carrot, grated
1 medium courgette, grated
1 garlic clove, chopped or crushed
350g sausage meat (or skinned sausages)
1 sheet puff pastry
1 egg, beaten
Sesame or poppy seeds (optional)


Method

  1. Heat the oil in a frying pan. Add the grated carrot and courgette and cook for 2–3 minutes. Add the garlic and cook for another minute until soft but not browned.

  2. Allow the vegetables to cool slightly, then mix with the sausage meat in a bowl.

  3. Roll the puff pastry to around 5mm thick into a rectangle.

  4. Cut the pastry lengthways into two long strips.

  5. Divide the sausage mixture in two and shape into logs down the centre of each strip, leaving a 1cm border at the edges.

  6. Fold the pastry over the filling and press to seal.

  7. Cut into 10 equal pieces (or your preferred size).

  8. Place on a lined baking tray, brush with beaten egg and sprinkle with seeds if using.

  9. Bake in a preheated oven at 200°C (180°C fan) for 20–25 minutes until golden and cooked through.


Cooking With Kids Tip

Let children grate the vegetables (with supervision) and help brush the egg wash on top. It’s a great way to introduce hidden veggies!
