Crispy Easter Rocky Road
A lighter twist on traditional rocky road, swapping biscuits for rice crispies. Perfect for Easter baking with children.

Ingredients
200g dark chocolate
200g milk chocolate
50g butter
1 tbsp honey
Rice crispies (approx 100g)
100g mini marshmallows
2 Crunchie bars, chopped
Mini eggs
¼ mini cream eggs
Method
Melt chocolate, butter and honey over simmering water or in short microwave bursts.
Stir in rice crispies, marshmallows and Crunchie pieces.
Line a tin with cling film and press mixture in.
Push mini eggs into the top.
Chill for 3 hours or overnight.
Cut into squares and serve.
