Crispy Easter Rocky Road

A lighter twist on traditional rocky road, swapping biscuits for rice crispies. Perfect for Easter baking with children.

Equipment

Heatproof bowl
Saucepan
Wooden spoon
22cm square tin
Cling film


Ingredients

200g dark chocolate
200g milk chocolate
50g butter
1 tbsp honey
Rice crispies (approx 100g)
100g mini marshmallows
2 Crunchie bars, chopped
Mini eggs
¼ mini cream eggs


Method

  1. Melt chocolate, butter and honey over simmering water or in short microwave bursts.

  2. Stir in rice crispies, marshmallows and Crunchie pieces.

  3. Line a tin with cling film and press mixture in.

  4. Push mini eggs into the top.

  5. Chill for 3 hours or overnight.

  6. Cut into squares and serve.
