Creamy Mackerel & Kale Pasta

A quick and creamy pasta dish packed with omega-3 rich mackerel and leafy greens. A brilliant way to include oily fish in your family’s weekly meal plan.

Serves: 4 (2 adults & 2 children)


Equipment

Large saucepan
Large wide frying pan


Ingredients

300g tortiglioni pasta
4 smoked mackerel fillets
100g soft cheese
50g grated Italian hard cheese
125g shredded kale
3 garlic cloves, crushed
2 tsp Dijon mustard
1 lemon
Fresh chilli (optional)


Method

  1. Cook the pasta in boiling water for 10–12 minutes until al dente.

  2. Meanwhile, crush the garlic and remove the skin from the mackerel. Flake into bite-size pieces.

  3. Heat a drizzle of oil in a large pan. Add garlic and kale, cooking for 30 seconds.

  4. Add the mackerel and cook for another minute.

  5. Drain the pasta, reserving a splash of cooking water.

  6. Stir in the mustard, soft cheese and juice of half a lemon. Add reserved water if needed to loosen the sauce.

  7. Serve with lemon wedges, black pepper and optional chopped chilli.
