Chocolate Mud Cakes

Rich, soft-centred chocolate mud cakes that feel like a children’s version of a melt-in-the-middle dessert. A quick chocolate fix perfect for little bakers.

Equipment

Mixing bowl
Wooden spoon
4 silicone cupcake cases


Ingredients

100g dark or milk chocolate
20g butter
2 tbsp Greek yoghurt
½ tsp vanilla extract
3 tbsp self-raising flour


Method

  1. Break the chocolate into pieces and place in a bowl.

  2. Microwave in short bursts on low power, stirring between each, until melted.

  3. Add butter and stir until melted and smooth.

  4. Stir in yoghurt, vanilla extract and flour until fully combined.

  5. Spoon evenly into silicone cupcake cases.

  6. Bake at 190°C for 8–10 minutes.

  7. Serve warm with fresh fruit or cream if desired.
